- 1 Whole Turkey approximately 2.8kg
- 1 Orange
- 150g Butter
- Bay Leaf
- Sprig Rosemary
- Sprig Thyme

- Make your flavored Butter. Zest 1 orange and stir into the Butter
- Get the Turkey Ready. Spatchcock the Turkey. Loose skin around the breast and place Butter under the skin, pushing it out to cover the whole area. Place the Orange and Aromatics in the Cavity of the Turkey.
- Set to Gourmet Roast function.
- Set Stage 1 to 295°C & 5 Minutes
- Set Stage 2 to 180°C & 1.5 Hours
- Add Pellets of Choice
- Start Oven to Start the preheat.
- Place the Turkey on the grill plate.
- Close door and cook for 5 minutes on Stage 1
- After Stage 1 is complete, loosely cover Turkey with Foil, or use the Heat Deflector from The Pellet Man
- With 10 minutes left remove the Foil or Heat Deflector.
- Make sure Internal Temperature of Turkey is 74°C before removing and restarting.
