Lamb Kofta Kebabs

Loaded With Middle Eastern Flavours!


These delightful Middle Eastern kebabs are loaded with flavour and each bit is packed with fragrant spices. British Minced Lamb is seasoned using a blend of Shawarma and Baharat seasonings. Cook on the bbq or in the oven grill for an amazing meal, served with fresh flatbreads and salad. Served hot or cold, it's up to you.

ingredients

    • 1 kg minced Lamb
    • 2 tbsp Shawarma Seasoning Click Here To Purchase 
    • 1 tbsp Baharat Seasoning
    • 1 large red onion, sliced
    • 4 salad tomatoes, roughly chopped
    • Gem Lettuce, shredded

    FLATBREADS – MAKES 4

    • 400g self raising flour
    • 200ml natural yoghurt
    • 1 tbsp baking powder
    • 2 tsp salt
    • 2 tbsp water
    • 2 tbsp Nigella seeds
    • 1 tbsp olive oil

Directions

  1. Place the lamb mince in a bowl and season with Shawarma and Baharat seasonings. Combine the mince and spices by hand, cover with clingfilm and place in the fridge overnight.
  2. Remove the mince from the fridge and bring to room temperature. Take handfuls of mince and shape them around wooden or metal skewers, forming a sausage shape with your hands. Repeat until you have no more kofta mix left then place to one side.
  3. When you are ready to start cooking, set your Ninja Woodfire Grill to Medium Grill, add the Olive Wood Pellets, press Woodsmoke Technology and Start.
  4. While the Ninja is getting up to temperature and the smoke is settling its time to make the flatbreads, combine all of the ingredients in a bowl then portion into 4 balls. When you are ready to grill them, roll them out as wide a possible then grill them for a minute or two either side until light and fluffy.
  5. Place the skewers on the grill and cook them for 5-10 minutes, turning as you cook. Use silicone tongs as the meat may fall apart. Cook until you have an IT (Internal Temperature) of 72°C - 160°F
  6. Slice up the lettuce, onions and tomatoes for garnish.
  7. Serve the salad and Kofta in the flatbread, drizzle with natural yoghurt and hot sauce if you fancy.
