Ninja Woodfire Oven Spanish Tray Bake

🛒 Ingredients:
- 4 skin-on, bone-in chicken thighs (or boneless thighs)
- 100g Spanish chorizo, sliced into thick rounds
- 500g baby potatoes, halved
- 1 red onion, cut into wedges
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 2 Vines Cherry Tomatoes
- 1/2 Cup Black Olives
- 3 cloves garlic, smashed (skin on)
- 2 tbsp olive oil
- 1½ tsp smoked paprika
- 1 tsp dried oregano
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: lemon wedges to serve
🔧 Prep Instructions:
- Preheat your Ninja Woodfire Oven to 200°C (Roast setting). Use woodfire flavour if desired (hickory or Olive Wood).
- In a large bowl, toss the chicken thighs with 1 tbsp olive oil, paprika, oregano, salt, and pepper. Set aside.
- In a separate bowl, toss the potatoes, onion, peppers, and garlic with the remaining 1 tbsp olive oil, salt, and pepper.
- Arrange the vegetables in a single layer in a Ninja-safe tray. Nestle in the chicken thighs and chorizo.
🔥 Cooking Instructions:
- Place the tray into the preheated Ninja Woodfire Oven and roast for 35–40 minutes, or until:
- Chicken is golden and cooked through (internal temp: 75°C),
- Potatoes are tender,
- Edges are slightly charred from the woodfire smoke.
- Halfway through, give the tray a gentle shake or turn the chicken for even cooking.
🌿 To Finish:
- Scatter with fresh parsley before serving.
- Serve with crusty bread, aioli, or a simple green salad.
