No need to visit Spain when we have great weather here! But you still fancy some Mediterranean Food.Try this Spanish Chicke Tray Bake in the Ninja Woodfire Oven.

Ninja Woodfire Oven Spanish Tray Bake

⏱️ Cook Time: 35–40 minutes

🔥 Cooking Mode:

Roast

(Woodfire Flavour Optional: Yes – recommend using it)

🛒 Ingredients:

  • 4 skin-on, bone-in chicken thighs (or boneless thighs)
  • 100g Spanish chorizo, sliced into thick rounds
  • 500g baby potatoes, halved
  • 1 red onion, cut into wedges
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 2 Vines Cherry Tomatoes
  • 1/2 Cup Black Olives
  • 3 cloves garlic, smashed (skin on)
  • 2 tbsp olive oil
  • 1½ tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: lemon wedges to serve

🔧 Prep Instructions:

  1. Preheat your Ninja Woodfire Oven to 200°C (Roast setting). Use woodfire flavour if desired (hickory or Olive Wood).
  2. In a large bowl, toss the chicken thighs with 1 tbsp olive oil, paprika, oregano, salt, and pepper. Set aside.
  3. In a separate bowl, toss the potatoes, onion, peppers, and garlic with the remaining 1 tbsp olive oil, salt, and pepper.
  4. Arrange the vegetables in a single layer in a Ninja-safe tray. Nestle in the chicken thighs and chorizo.

🔥 Cooking Instructions:

  1. Place the tray into the preheated Ninja Woodfire Oven and roast for 35–40 minutes, or until:
    • Chicken is golden and cooked through (internal temp: 75°C),
    • Potatoes are tender,
    • Edges are slightly charred from the woodfire smoke.
  1. Halfway through, give the tray a gentle shake or turn the chicken for even cooking.

🌿 To Finish:

  • Scatter with fresh parsley before serving.
  • Serve with crusty bread, aioli, or a simple green salad.
